Description of the Software.
The software for the ohmic equipment was developed using the user friendly LabVIEW graphic programming language for Windows. There are two parts of the software: one for acquiring data and the other for processing and manipulating it.
The user controls the equipment from a computer. The data acquisition screen automatically controls the voltage profiles needed to heat the material and collect the data generated during cooking: current, voltage, and temperature.
The program allows the user to manipulate the data without the need for other software: it can generate graphs and calculate the appropriate derivatives and integrals in order to determine thermal properties like initial gelatinization temperature, final temperature, enthalpy, etc. The program easily manipulates all data and is very user friendly.
